The Best EVER Apple Waffles for One Recipe!
The old saying, “An Apple A Day Keeps the Doctor Away” is not just an old wives tale. There really is some truth behind it. According to a great health centered website healthline, eating an apple a day, skin and all is known for lowering cholesterol. Also apples contain pectin a fiber that acts like a prebiotic that feeds good bacteria to the gut. And there’s much more! Apples can actually aid in weight loss due to their fiber and water content. A study showed that someone eating an apple before a meal ate an average of 200 calories less than those who didn’t (1).
In this recipe Fonio is making an appearance. Fonio is a grain indigenous to West Africa and is a relative of millet grain. Fonio is low in carbohydrates and high in fiber. It has a low glycemic index and does not cause a spike in blood sugar levels. Now on to this amazing apple waffle recipe! These waffles are dairy free, gluten free, refined sugar free and oil free (except for the oil you’ll need to brush on the waffle iron). The recipe is enough for one serving but it can be doubled to make two servings. Feel free to eat these waffles for breakfast, lunch, brunch, dessert or even dinner. 😊
Gluten Free Plant Based Apple Waffles for One
- 1/2 cup of Organic Sprouted Oats (regular oats will work as well)
- 1/4 cup of Fonio Grain
- 3/4 teaspoon of Baking Powder
- 1/2 teaspoon of Cinnamon
- 1/4 teaspoon of Sea Salt
- Small Tart Green Apple (or any tart apple) shredded (equivalent of 1/2 cup)
- 1 tablespoon of Maple Syrup
- 1/2 cup of Unsweetened Vanilla Hemp Milk (I use this one)
- 1 teaspoon of Apple Cider Vinegar
Topping
1 Sliced Apple
2 tablespoons of Walnuts
Maple Syrup
Warm up your waffle iron.
Pour a 1/2 cup of Vanilla Hemp Milk in a liquid measuring cup and add 1 teaspoon of Apple Cider Vinegar to it and place to the side.
Take a 1/2 cup of the Oats and 1/4 cup of Fonio Grain and place in a high speed blender. Blend for about 3 minutes til it becomes a flour. Pour the flower mixture into a bowl. To the bowl add the Baking Powder, Cinnamon and Sea Salt. Mix together.
Shred one small Green Apple (Granny Smith or any Tart Apple like Pink Lady). You just want to shred enough to be the equivalent of a 1/2 cup. Place shredded apple in the flour mixture and mix.
Finally add the Maple Syrup and the Vanilla Hemp mixture that was set aside earlier. Mix it all together till incorporated. Please do not over mix.
Scoop out the waffle mixture on your waffle iron and cook according to the directions on your waffle maker.
You will get two nice size waffles.
For the topping, take another tart apple, peel and cut into slices add them to a small fry pan and saute them on the stove in a little coconut oil until soft, add walnuts, after about a minute add about 2 tablespoons of Maple Syrup mix till incorporated and your topping is done!
Place the apple topping mixture on the apple waffles. You can add more maple syrup to drizzle on top. I also think a non-dairy yogurt would be amazing on top as well.
