Orange Poppy Seed Waffles
How often do you see oranges cooked or baked in recipes? Or better yet in waffle recipes? Well my dear friends here’s a waffle recipe using chunks of oranges cooked in the waffle. This waffle has a lot going on it’s bright, citrusy, sweet, slightly crunchy due to the poppy seeds and sooo good!
With the orange season (December to April) almost over, oranges are in the food markets right now, sweet, juicy and just waiting to be eaten and used. So the next time you pick up some oranges set one or two aside to make these delicious waffles.
Orange Poppy Seed Waffles
Makes 2 waffles-serving size for 1 person
1 Organic Orange
1/2 cup Oat Bran (I used this)
1/4 cup of Quinoa Flakes (I used this)
2 teaspoons of Poppy Seeds
1 teaspoon of Maple Sugar (or coconut palm sugar)
1 teaspoon of Orange Peel
1/2 teaspoon of Baking Powder
1/4 teaspoon of Sea Salt
1/4 teaspoon of Cardamom
1/2 cup of Plant Based Milk (Used brazil nut milk made by me)
1 tablespoon of Olive Oil

Take the orange and wipe the whole orange down with a mixture of hydrogen peroxide and filtered water (take two capfuls of hydrogen peroxide and half a cup of water).

Dry orange and with a grater grate enough orange peel for 1 teaspoon of orange peel, set aside. Peel the orange and take 4 segments of the orange and with one of the segments squeeze juice out to make 1 teaspoon of orange juice, place to the side and with the other segments cut into small pieces and place to the side. The rest of the orange is for you to snack on while finishing up the waffles.😊

Blend together the oat bran and quinoa flakes in a high powered blender to make a fine flour and then place the flour in a bowl.

In the bowl with the blended flour add the poppy seeds, sugar, orange peel, baking powder, sea salt & cardamom.
- In a liquid measuring cup add plant based milk to the 1/2 cup line, then add the teaspoon of orange juice and 1 tablespoon of olive oil.

Pour the liquid from the measuring cup into the flour and mix all together.

Mixture should be thick but not too thick (like thick pancake batter), feel free to add a little more plant based milk if mixture is too thick.

Fold in the orange pieces.

Heat waffle iron and spray or brush a little oil on the iron and pour half the mixture on the waffle iron and cook the waffle according to your waffle iron instructions.
- Pour the rest of the mixture on the waffle iron and cook the last waffle.

Serve with maple syrup, nondairy yogurt or more fruit like bananas.
